Easy Peasy Quinoa Salad🌱

One more simple recipe for a new vegan family…

This is our second favorite vegan recipe that Ryan and I make next to our chili, especially in the summer. We will whip up a big batch of this salad and feast on the leftovers all week.

The other reason we love this salad is it’s super easy to substitute any of the ingredients. If your out of a bean or vegetable you can easily substitute for something that you do have.

I am always super busy with our daycare-preschool and our boys, this at times can make me be a bit forgetful,🤔 so having dinners that can be forgiving like this one and last for a few days, is really nice.

Because of this, I think it’s almost a different salad every time we make it.

Ryan loves to put this salad in a burrito(he puts everything in a burrito except soup). But even so, with a little sriracha sauce and spinach, it really does makes a pretty yummy burrito!😁

Directions🌱

You will want to start with the quinoa, follow the instructions for making 2 cups of whatever type of quinoa you like. While this is cooking you can do the following in any order.

  • rinse and drain the beans and frozen vegetables
  • dice up fresh veggies including cilantro🥑
  • cut in half and squeeze the juice from the 3 limes, set aside
  • Chop up garlic

All of the above ingredients can be put in a large bowl. Once the quinoa is finished and cooled a bit, I mix the quinoa in the bowl with the other ingredients.

The last step is to drizzle the salad with a tablespoon of olive oil, and season to your liking.

The prep time here is mainly in cooking the quinoa. But after the quinoa is done and everything has been mixed together I suggest chilling the salad for about an hour.

  • 2 cups cooked quinoa
  • 1 cup fresh or frozen corn
  • 1 cup fresh or frozen peas
  • one cucumber chopped
  • 2-3 limes depending on size and your preference
  • 1-2 tablespoons of olive oil
  • 1-2 bunches of cilantro diced
  • 1 avocado 🥑 diced
  • 1-2 cloves of garlic
  • 2 bell peppers( I usually get a yellow and red one to add more color)
  • Salt and pepper to taste
